Baking Instructions

First off, I acknowledge that we all have different ovens and that temps vary. The following is how I choose to bake my cookies:

1. Pull the cookies from the freezer and put them in the fridge overnight to thaw. Baking from frozen will work, it just will be different. If you want to walk on the wild side - go for it! My only word of advice is: use your sense of smell while the cookies are baking! This will help you know when they are finished as you may have to deviate from the instructions below.

2. When your cookie dough is thawed, preheat the oven to 350F. I use a convection oven, if you don't have a convection, you may want to bump the temp to 375F. While your oven is heating, line your sheet tray with parchment and place the cookies with enough space to spread (I usually put 6-8 per tray).

3. When the oven is preheated, place the tray in the oven and bake for 7 minutes. Take the cookies out and give them a bit of a smash (you can flatten the cookies a bit before you begin baking instead, if you wish). Rotate the pan and then bake for another 5 minutes.

4. Once your cookies are finished baking, sprinkle flaked sea salt on top and enjoy!
